  • 3 lbchicken, cut into pieces
  • 2 cupsred wine, dry
  • 6 stripsbacon, thick-cut, diced
  • 8 ozmushrooms, button or cremini, halved
  • 1 cuppearl onions, peeled
  • 1 cupchicken stock
  • 2 tbsptomato paste
  • 2 sprigsfresh thyme

    Cook bacon until crispy, remove and drain fat except 2 tbsp

    Remove chicken, sauté onions and mushrooms until golden
